Banana and Oat Muffins

We all want to feel a little bit healthier now and again but don’t want to miss out on treats either! This is where Gordon Ramsay’s Healthy Appetite Book comes into its own. Rob and I have come back to this book time and time again for new healthy ideas and there are a couple of recipes we do on a regular basis. One of these is his Banana and Oat Muffins. They are great for your mid-morning cup of tea or when you need a pick me up in the afternoon. They don’t disappoint on taste and you can rest assured that they won’t go straight to your hips! Although I am not sure if it counts when I have more than one in one sitting!



• 200g plain flour

• 1.5 tsp baking powder

• 1 tsp bicarbonate of soda

• 0.25 tsp salt

• 100g oats

• 100g light brown sugar

• 4 ripe bananas

• 60g melted butter

• 1 large egg

• 75g chopped walnuts


• Preheat the oven to 180c (160c fan).

• Put muffin wrappers into a 12-hole muffin tin.

• Sift the flour, baking powder, bicarbonate of soda and salt into a mixing bowl. Add the oats and sugar and mix well.

• In a separate bowl, mash the bananas with a fork and then mix in the egg and the melted butter. Add to the dry ingredients.

• Spoon the mixture into the cake cases and bake for 20-25 minutes until golden.
